It took a while for me to find a recipe that i can throw in a cup and run out the door in five minutes AND be healthy! I was trying out a few recipes, mainly ones I’d scanned from Pinterest and they’d call for a pinch of fairy dust with a squeeze of leprechaun juice and i just couldn’t keep up with it.
SO! I figured I LOVE peanut butter which is packed of protein and thought I’d give this one a go!
So the recipe calls for:
1/2 a frozen banana (peeled & you can add more if you want thicker)
1 generous teaspoon of organic, unsweetened unsalted peanut butter
2 large handfuls of spinach
1 – 2 cups of unsweetened vanilla almond milk (you could use water too or regular milk)
Ice if desired (sometimes i don’t, sometimes i do!)
and voila!
I usually peel a bunch of bananas and throw them in the freezer ready to rock and roll, you can add PB2 instead of peanut butter if you want to avoid the fat content which I’ve tried a couple of times too!
It tastes WAY better than it looks, and it’s better than a bacon & egg on a croissant right!?
